BLOGMAS DAY ELEVEN: GINGERBREAD CUPCAKES TWO WAYS

Hello everyone, welcome to blogmas day eleven and the second "Christmas Treats" post of the month! One of my favourite flavours/scents at this time of year, is literally anything gingerbread flavoured from soy lattes, to candles and cupcakes. So with that in mind i just couldn't go without sharing with you these super fun and delicious gingerbread cupcakes, which can be served two different ways...


12 Cupcake Cases
12 Mini-Gingerbread Men (either store bought or homemade)
175g Self Raising Flour (sifted)
1 teaspoon Baking Powder
1 teaspoon Ground Ginger
1 teaspoon Cinnamon 
175g Softened Butter
175g Caster Sugar
3 Eggs
75g Softened Butter (for the frosting)
120g Cream Cheese
420g Icing Sugar (sifted)
1/2 teaspoon Cinnamon (for the frosting)


First of all, you are going to want to pre-heat your oven to 180c/350f/gasmark4 and line a baking tin with the 12 cupcake cases. In a bowl/mixer, sift in the flour, ground ginger, cinnamon and baking powder before adding in the butter, sugar and eggs. Mix all of the ingredients together until well combined, before dividing the mixture into your pre-lined cupcake cases, filling each case around 2/3 full and bake in the oven for around 20-25 minutes. Once out of the oven leave to cook completely before decorating with frosting. To make the frosting, place the butter and cream cheese in a mixer and combine before adding in the sifted icing sugar a third at a time. Once combined add in the teaspoon of cinnamon, mixing it into the mixture before piping/spooning the mixture on-to the cupcakes. All that is left to do is decorate the cupcakes, i decided to decorate mine two different ways. With half of the cupcakes i simply just placed a mini gingerbread man on-top and with the other half, i crushed six mini gingerbread men up with a rolling pin before sprinkling them over the cupcakes.
