HALLOWEEN WEEK: PUMPKIN SPICE HALLOWEEN COOKIES

For today's post i am back with the second installment of "Halloween Week" and this time i am going to share with you a baking post, which is something i haven't posted about for the longest time now. For Halloween as well as it being a time to dress up and get up to all kinds of tricks, there is also some room for some treats. I created these super easy/fun and yummy Pumpkin Spice Halloween Cookies, so naturally i had to share it with you all...


To make these cookies you will need:

450g plain flour (plus extra for dusting)
2tsp ground ginger
1tsp ground ginger
1/2tsp ground nutmeg
1/2tsp ground all spice
2tsp bicarbonate of soda
115g butter (plus extra for greasing)
100g golden syrup 
115g light muscovado sugar
1 egg, beaten

To decorate these cookies you will need:

spooky halloween cookie cutters of your choice 
Ready to roll icing colour's of your choice to decorate 

Method:

Preheat the oven to 160c/325f/gas mark 3, then grease three large baking trays. Sift the flour, spices and bicarbonate of soda into a large bowl. Place the butter, golden syrup and muscovado sugar into a saucepan over a low heat and stir until melted. Pour onto the dry ingredients and add the beaten egg. Mix together to make a dough. The dough will be sticky to start with, but will become firmer as it cools. On a lightly flour dusted work surface, roll out the dough to about 3mm thick and then taking your cutters and stamping out the shapes. Place the shapes on the prepared baking trays. Re-knead and re-roll the trimming and cut out more shapes. Baking in the preheated oven for 15-20 mins or until firm and lightly browned. Remove from the oven and leave to cool on the trays for a few mins before transferring to a wire rack/s to cool completely. When completely cooled you can begin to make the decorate the cookies however you please. I rolled out some ready to roll coloured icing with the same shape cutters i used for the cookies and placed over to create the desired effect and added a few small details using small pieces of the same icing. All is left to do is sit back, share and enjoy!
