Breakfast time and i wanted to have something different for a change. So i went for some scrambled eggs on wholegrain toast, topped with some cracked black pepper.
Lunchtime and it was pancake day recently, so naturally you just want to have pancakes everyday after that. So that is what i am having for lunch but unlike on pancake day i ditched the ice cream i inhaled to make it a lot healthier and more justifiable. Blueberry pancakes with extra blueberries on the side and topped with a little icing sugar and cinnamon.
Dinner time and i am having a roasted sweet potato topped with mozzarella cheese, chilli flakes and a little oregano. This is a recipe adapted from a Jamie Oliver one, simple yet so delicious.

wow those pancakes look amazing, I'm craving pancakes now haha! I love sweet potato too, this looks like such a yummy day of eating x
