EASTER TREATS WEEK: BUNNY BISCUITS

Hello Everyone and welcome to day three of Easter Treats Week. So far this week has bought you a chocolate nests and chocolate cupcakes, so i thought it was time to incorporate something non-chocolaty in the form of Easter shaped biscuits and more specifically bunnies...


To make the bunny biscuits you will need:

cutter of your choosing
200g butter, softened 
150g caster sugar
2 large eggs, yolks only
400g plain flour, plus extra for rolling
1 teaspoon mixed spice
1 teaspoon ground cinnamon 
2-4 tablespoons milk
ready roll icing to decorate


Method:

First of all before you begin, you are going to want to pre-heat your oven to 180c/gas mark 4 and then lightly grease as well as line two baking trays with baking parchment. Next taking a bowl and creaming your softened butter and sugar together until light and fluffy, then beat in the two egg yolks. Sift in the flour and spices along with the milk to then bind into a fairly soft dough. Roll out your dough to about 1/4inch thick and then cut out the shapes of your choice using a cutter. Bake the biscuits in the oven for about 10-15 minutes and light/golden in colour. Once out of the oven leave to cool completely on a wire rack, before decorating however you like.
