EASTER TREATS WEEK: VANILLA DAISY CUPCAKES

Hello Everyone and welcome to day four of "Easter Treats Week". For today's installment i am back with another cupcake recipe but this time it's all about a vanilla flavoured cupcake, rather than something chocolaty. These particular cupcakes are perfectly decorated for not only Easter but also for a birthday party rather than having one large cake...


To make the cupcakes you will need:

12 cupcake cases
175g butter, softened
175g caster sugar
175g self raising flour
3 eggs, large
1 tablespoon baking powder
1/4 teaspoon vanilla extract 

To make the butter cream icing you will need:

250g sifted icing sugar
80g unsalted butter, softened
25ml whole milk
couple drops vanilla extract


Method:

First of all you are going to want to pre-heat your oven to 180c/gas mark 4 and line your tins with the cupcake cases. Then it's time to get started with the mixture, taking your butter, sugar, eggs, vanilla extract and then start to mix them together either in a mixer or with a spoon. Gradually add in the flour and baking powder and continue to mix until combined and smooth. Place the mixture into your cupcake cases and bake in the oven for about 20/25 minutes. Once out of the oven leave to cool completely before decorating. To make the butter cream icing you are going to want to beat the icing sugar and butter together in a bowl/mixer until the two ingredients are combined, then add in the milk and vanilla extract and continue to combine together. Add in any colouring if you want a different colour icing, then add in small amounts to the mixture until you achieve the colour you want. All that is left to do then is decorate to your own choosing.
